Mexican Style Street Corn

We have been craving this dish since summer rolled around. There is nothing better than a BBQ with a side of corn. This recipe takes your corn to the next level and is a play off classic Mexican Street Corn. To top off the amazing corn, we made an incredibly easy Chili Crema that brings the flavors to a whole new level! This recipe can be made by boiling the corn or grilling the corn and since we are living in New York…we can only dream of grilling…so stovetop it is!


4-8 ears of sweet corn (removed from husks)

1/4 cup of Mayonnaise

1 cup of Crumbled Feta or Cotija Cheese

1 Chipotle Pepper or Chili Lime Seasoning

2 Hot Peppers

1 Lime


Optional: Chili Crema Ingredients

1/2 cup Mayonnaise

3 tbsp Lime Juice

1 tsp Red Pepper Flakes

2 tbsp Chile Pepper or Chili Powder

1 tbsp Cumin

1 tbsp Cayenne Pepper

1 tbsp Olive Oil




Cook corn in boiling water for 3-5 minutes.

Remove corn and brush with mayonnaise on all sides.

Roll corn in crumbled feta and season with chili lime seasoning or chipotle pepper.

Optional: (In a separate bowl, mix together Chili Creama ingredients.)

Slice Hot Red Peppers and top for presentation and an extra kick.

Top with fresh Chili Crema, a freshly squeezed lime and serve immediately!
