"Carbone" Spicy Rigatoni Vodka Pasta

Our favorite expression goes like this: “TALENT borrows, GENIUS steals”. So yes, we’re geniuses! We stole the Spicy Rigatoni Vodka recipe from Carbone and put our own little spin on it! Once you have made this in your kitchen…you will officially be ready to open up your own restaurant. Start printing the menus cause you’re on your way!


1 Box of Rigatoni

1 Onion (Chopped)

1 Head of Garlic (minced or whole)

7 oz Tomato Paste

2-3 tbsp Chili Paste (or Red Pepper Flakes)

¼ cup Vodka

3 tbsp Olive Oil

1 1/4 cup Half and Half (or Heavy Cream)


In a pot of boiling salted water, cook Rigatoni to your desired tenderness.

In a medium pan on medium, cook chopped onion and whole garlic cloves in olive oil until tender (15-20 minutes).

Add tomato paste and chili paste and stir. Let simmer for 2 minutes.

Add vodka and let simmer for 5 minutes.

Add half and half and keep simmering for 10 minutes. Stir constantly. Taste and add salt and pepper as desired.

Drain pasta and save ½ cup of pasta water.

Add pasta to sauce and stir.

Add pasta water 1 tbsp at a time until sauce has reached desired consistency.

Serve immediately and realize that you just made the BEST Spicy Rigatoni in your home! You’re a genius!
